Happy Saint Patrick's Day


It comes as no surprise that we take St. Patrick's day pretty seriously around our house (at least a sober celebration of St. Patrick's Day, that is). We color our milk green, we listen to Paddy Reilly, we eat corned beef and cabbage, I wear my shamrock socks and pull out my "World's Tallest Leprachaun" rosette, and I certainly take it a little personally if people don't wear green for the day.

But I'm not just posting this as a place for everyone to wish me a very Lucky Birthday (although, feel free to of course!), but because I just found out about this little Irish (or should I say, "Irish"?) treat that Max's primary teacher gave me today and I totally couldn't wait to share....


Irish Potato Candy

It's a little candy made from cream cheese and coconut, and rolled in cinnamon, making it look just like a little potato. They are seriously sweet, but for a once-a-year thing when you need something to combat the taste left by the caraway seeds in your soda bread, it hits the spot. Now, I haven't made them myself yet, but it looks pretty easy as there's no baking required. If you try them, be sure and let me know how it goes.

Irish Potato Candy
1/4 c. butter, softened
1/2 (8 oz) package cream cheese
1 tsp vanilla extract
4 cups confectioners' sugar
2 1/2 cups flaked coconut
1 Tb ground cinnamon

In a medium bowl, beat the butter and cream cheese together until smooth. Add the vanilla and confectioners' sugar; beat until smooth. Using your hands if necessary, mix in the coconut. Roll into tiny balls that are potato shaped, and then roll in the cinnamon. Place onto a cookie sheet and chill to set. If desired, roll potatoes in cinnamon again for darker color. Makes approx 5 doz candies.

(Eds. note: the ones I tried were pretty small, about the size of a gnochi. Any larger and I imagine that the sweetness would be way too much at one time.)

Happy Birthday! Our Wild Irish Rose is 4 today. (Okay, so we haven't discovered any Irish ancestors yet, although my mom insists they must be back there somewhere, now that she's had 2 grandkids born on St. Paddy's (the other is my brother's son.) I've wondered whether someday Rose might get tired of wearing green on her birthday, (they even stuck a tiny green bow on her head with corn syrup at the hospital four years ago,) but it sounds like she might not.

Happy Birtday, Jennette. I posted some memories in the comments on Anna's blog, so read more there.

So how do you think those little spuds we be if they were rolled in cocoa instead of cinnamon? I can't think of any ingredients that would be unrelated to the chocolate -- you know, butter, creamed cheese, coconut, and vanilla, all good with chocolate.

Happy Birthday! I was going to email you for your birthday but thought I'd better check here first and I'm happy to see the birthday post. =)

Our kitchen unfortunately looks shockingly like your before pictures (even though you seem to have been spared the drop ceiling). Some day we will also be brave and gut and rennovate. When we do, I'm counting on your for lots of advice.

I found a version requiring less ingredients and less work. Since we are kitchenless right now, and the kids wanted to help I decided it was a better option. The recipe is:

1 C confectioners sugar
1 C coconut
~2Tbsp of cream

combine in a bowl, roll into small balls, shake balls in a zip-lock bag filled with cinnamon (~ 1Tbsp was enough). Probably not as tasty as the recipe that Jennette posted, but good enough for a quick treat that the kids can help making.

Happy Birthday! Isn't it great to turn 29? I think so. Finally, I am actually telling you happy birthday on your birthday. I still have a St. Pat's/Birthday card that I bought like 5 years ago for your birthday. I am sure that it is somewhere around here. Oh well. Happy birthday!
